Quick and Easy Stir Fry Vegetables (Frozen Blend)

This is my favorite stir-fry recipe using frozen vegetables, it's super easy, and this stir-fry sauce is amazing.

I used Costco Kirkland Frozen Stir-Fry Vegetable Blend this time, but you can also mix whatever frozen veggies or fresh veggies you have (broccoli, carrots, onions, green beans, bell peppers, snap peas / snow peas are great options), or use a stir fry mix from your favorite grocery store.

There is also a similar recipe Asparagus, Mushrooms and Pepper Stir-Fry here, this combination is very delicious, too. Both the recipes have lots of flavor, are easy to prepare, require little time and make for a great weeknight dinner, especially on a busy night. I'm sure you have never had your stir fry veggies so good!

Ingredients

  • 3 cups vegetables (frozen broccoli, carrots, green beans, sugar snap peas, red bell peppers; My Costco Kirkland Frozen Stir-Fry Vegetable Blend also included shiitake mushrooms, water chestnuts, baby corn and yellow onions)
  • 1/4 cup water
  • 1 1/2 tablespoon soy sauce (I used low sodium)
  • 1 clove garlic (large, minced or finely grated)
  • 1 teaspoon ginger (I use dry, but fresh ginger can be used instead)
  • 2 tablespoons avocado oil
  • 1 teaspoon arrowroot starch (aka arrowroot flour) (can be substituted by tapioca starch, or corn starch)
  • 1 tablespoon sesame seeds

Instructions

1. In a large skillet (or wok), heat 1/2 of the avocado oil. Once the oil is hot, add vegetables to the sizzling skillet and stir fry over medium-high heat 5 to 7 minutes, until tender-crisp. The high temperature of the skillet ensures the veggies stay crisp, preventing the undesirable outcome of soggy vegetables.

2. In a small bowl, prepare the stir-fry sauce by combining the sauce ingredients: water, soy sauce, garlic, ginger, arrowroot starch, and the remaining oil.

3. Stir in and cook over medium heat for another minute. Stir in sesame seeds and serve.

When I put frozen veggies in the oil it wilts the veggies. They do not look like your veggies.

Loved it. I too added some meat (chicken) that I had already cooked and such a delicious and easy dish. Doubled the sauce to make a big dish for leftovers. Thanks for sharing.

I doubled the sauce amount so that I could add pork loin to this. I sliced the pork thinly & with one batch of sauce, cooked it in my instant pot for 15 minutes. I stir fried the veggies, added the cooked meat and sauce, then the second batch of sauce, heated and served over cauliflower rice. DELICIOUS! This one is a keeper! Thank you for sharing it!
