Cabbage Salad with Rice and Salami

Ingredients
- 1/2 green cabbage (small, shredded)
- 1 cucumber (cut into small strips, I used Persian cucumber)
- 6 ounces salami (cut into small strips, or smoked sausage)
- 1 1/2 cup rice (cooked, I usually boil it for 20 minutes)
- 1/4 cup avocado oil mayonnaise
- salt
Yield: 4 Servings | Prep time: 10 minutes | Cook time: 20 minutes | Total time: 30 minutes
Instructions
1. Place shredded cabbage in a large bowl and season with salt. Using your hands, massage the salt into the cabbage by grabbing handfuls of the cabbage and squeezing it.
2. Add cucumber, rice and salami. Mix well.
3. Stir mayo into the salad and add more salt to taste if needed.
