Ingredients

  • 1 cup limeade (your favorite limeade from any grocery store or homemade limeade, mine is from Trader Joe's, Simply Limeade will also work)
  • 1/3 cup silver tequila (aka blanco tequila)
  • 2 tablespoons lime juice (freshly squeezed)
  • 2 tablespoons Cointreau (orange liqueur, if not available, can be substituted by Grand Marnier or triple sec)
  • ice (cubes)
  • GREEN FOOD COLORING:
  • 1 cup spinach (fresh)
  • 3 tablespoons water

Notes

A perfect drink for Halloween parties. This easy recipe is designed for a generous single drink, and while you have the option of using a cocktail shaker, I've found that a simple stir with a spoon works perfectly for this recipe.

If making a big batch (like a large pitcher), adjust the recipe accordingly. IMPORTANT: Add the green coloring and lots of ice right before serving to keep it fresh. Make it look extra nice by adding lime slices to individual margarita glasses and placing them next to the pitcher. And if you want, you can even put a little bit of salt on the rims of the glasses for an extra touch.

Instructions

1. Prepare the green coloring. In a saucepan, bring washed spinach and enough water to cover it to a boil. Let it simmer for about 5 minutes until the spinach is tender.

2. Place the cooked spinach in a blender cup and add water (the amount written in the ingredients under 'green food coloring'). Blend the mixture with an immersion blender until it forms a smooth, green liquid.

Strain and set the green coloring aside to cool.

3. Make the Green Halloween Margarita: in a 17 oz glass, combine limeade, tequila, fresh lime juice, and Cointreau. Add the green coloring you prepared earlier, 2 Tablespoons per drink, and stir well to incorporate. Add ice cubes to the top of the glass. If serving later, add green coloring and ice just before serving, this ensures that the ice won't melt too quickly and helps maintain the vibrant green color.

4. Garnish with a lime wedge if desired. Sip and savor this refreshing Halloween Margarita!
