Oven Baked German Pancake Recipe (aka Dutch Baby)

Ingredients

  • 6 eggs (large)
  • 1 cup whole milk
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 tablespoons ghee (or unsalted melted butter)
  • powdered sugar (confectioners’ sugar, for serving)
  • blueberries (for serving)
  • strawberries (sliced, for serving)

Notes

Some recipes recommend using room temperature ingredients, a hot pan, or allowing the batter to rest for the best results. However, this recipe consistently yields a perfectly puffed giant pancake for me even without these additional steps.

Instructions

1. Preheat oven to 400°F (200°C). Add ghee to a 9" by 13" steel cake pan and use a silicone brush to evenly coat the bottom.

2. Add eggs, whole milk, maple syrup, vanilla extract, all-purpose flour and salt to a blender or food processor (you can also use a hand blender).

Blend until you have a smooth and thin batter, making sure to scrape down the sides of the blender as needed to incorporate all the pancake ingredients.

3. Pour pancake batter into the prepared pan.

4. Place the pan into the hot oven and bake for approximately 20 minutes, or until the pancake is puffed and lightly golden brown around the edges.

5. Once the Dutch Baby is done baking, remove it from the oven and top it with a generous amount of fresh berries, such as fresh blueberries and sliced strawberries. Add a sprinkle of confectioners’ sugar for a touch of sweetness. Optionally, drizzle with maple syrup for an extra layer of flavor.
