It pairs perfectly with almost any side dish, you can serve these juicy chicken breasts bites with mashed potatoes and green beans or opt for a simple salad for a lighter meal.

Ingredients

  • 3 chicken breasts (skinless, boneless)
  • 2 cloves garlic (finely grated)
  • 2 tablespoons avocado oil
  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon butter (ghee for Paleo / Whole30)

This healthy chicken recipe is also fantastic for meal prep, guaranteeing delicious meals throughout the week. When you're ready to enjoy again, simply reheat in a toaster oven for a quick and satisfying meal.

Instructions

1. Preheat your oven to 400°F (200°C).
2. Start by patting dry boneless skinless chicken breasts with paper towels. On a cutting board, cut the chicken breasts into bite-sized pieces (about 1 - 1 1/2 inch chunks), aiming for equal sizes to ensure even cooking.

3. Combine the chicken pieces with finely grated garlic, avocado oil, paprika, onion powder, dried thyme, salt, and black pepper. Mix well to coat the chicken evenly with the seasoning.

4. Spread the seasoned chicken pieces in a single layer on a baking sheet (optionally lined with parchment paper for easier cleanup).

5. Bake in the preheated oven for about 18 minutes or until the chicken is cooked through. Please note that cooking time may vary depending on your oven. Use a meat thermometer to check that the internal temperature reaches at least 165°F (74°C).
6. Once done, remove the chicken from the oven. For an extra touch of richness and flavor, add a tablespoon of butter to the middle of the baking sheet (or ghee for Paleo / Whole30). Use a spatula to stir the chicken and coat it evenly with the melted butter. Garnish with freshly chopped parsley. Serve hot and enjoy your perfectly seasoned oven-baked chicken breast bites!
