A very healthy recipe with asparagus, green beans, cauliflower and beef. Great for Vegetable lovers and beef lovers.
Beef and Vegetable Stir-fry

Ingredients

  • 1 pound sirloin steak (boneless, cut into thin strips)
  • 3 tablespoons vegetable oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/2 cauliflower (broken into small florets)
  • 1/2 pound green beans (fresh, trimmed)
  • 1 pound asparagus (cut into 2-inch diagonal pieces)
  • 6 baby carrots (cut into diagonal pieces)
  • 4 ounces spaghetti (cut in quarters, half cooked and drained)
  • salt (to taste)

Instructions

1. Heat 2 tablespoons vegetable oil over medium-high heat in a wok or large skillet.
2. Brown beef until just cooked through, about 10 minutes. Season with chili and garlic powders, then reduce heat and simmer.

3. In another large skillet stir-fry cauliflower, green beans, asparagus, carrots and spaghetti in 1 tablespoon oil until heated through (for about 7 minutes).

4. Mix everything together in one of the skillets, season with salt, cover and simmer for another 7 minutes, until desired tenderness. Serve.
