Easy Breakfast Egg Bake with Potatoes and Sausage

  • 1 pound pork sausage (I use bulk Italian sausage)
  • 1 pound hash browns (I use frozen. but shredded fresh potatoes should work too)
  • 6 eggs
  • 1 cup whole milk
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • salt
  • pepper
  • green onions (chopped)
  • parsley (chopped, for topping, optional)
  • tomatoes (for topping, optional, I use cherry tomatoes, sliced)
  • avocado oil (for greasing the baking dish)

1. Preheat oven to 350F (180C). Lightly grease 9" x 13" baking dish.
2. Spread frozen hash browns in an even layer across the bottom of the prepared baking dish. Season with salt.

3. In a large skillet over medium heat, cook breakfast sausage, until brown and crumbled (use a spatula to break up meat).

4. Spread the sausage over hash browns. Sprinkle with green onions (to taste).

5. In a bowl, whisk together eggs, milk, onion powder, garlic powder. Season with salt and pepper.

Evenly pour the egg mixture over the sausage. Lightly flatten the ingredients with a spatula.

6. Bake in the preheated oven for 45 - 50 minutes, until the middle is cooked through (cooking time may vary depending on your oven).

7. Top with sliced cherry tomatoes and additional chopped green onions or parsley. Cut into individual servings and enjoy.
