Green Beans with Mushrooms and Onions
Green beans lightly boiled and then sauteed with mushrooms and onions. A very easy and very delicious way to prepare green beans side dish.

Ingredients

  • 1/2 pound green beans (I used frozen)
  • 5 ounces mushrooms (sliced, I used baby bella)
  • 1 onion (medium, sliced)
  • 1 tablespoon olive oil
  • 1 tablespoon butter (or ghee for Whole30)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • salt (to taste)

Instructions

1. In a medium pot, bring water to boil. Add green beans and cook until tender (for about 5 minutes, or follow your package instructions).

2. In a skillet, heat butter and oil over medium-high heat. Add onions and mushrooms, cook for about 7 minutes.

3. Add green beans, season with garlic powder, salt and pepper, cook and stir for 3 more minutes and serve.

Made it for my wife and she loved it. I used garlic salt instead of garlic powder and salt. I also used purple onions.

Today is my bonus son's birthday and I made homemade crab cakes and served this recipe as one of the side dishes. It was such a hit, it was the first thing gone on everyone's plate. Needless to say (but I will) if a side dish can top homemade crab cakes and artichokes, it is an AMAZING recipe. Thank you!

Do ahead?

Have you ever done this recipe ahead and then reheated it? If so, can I do it the night before without it getting soggy?

Try cooking green beans slightly less then reheat next day, the beans will cook more during reheating. And I would suggest keeping beans and mushrooms separately until reheating.
