Oatmeal Apple Muffins
These oat flour apple muffins are made with Greek yogurt and sweetened with apple sauce and honey to make them healthier. They come out soft and moist, bursting with apple flavor. A perfect grab-and-go breakfast or school / work snack. This apple oatmeal muffin recipe is a must, especially when fresh apples are in season.

Ingredients

  • 2 cups rolled oats (for oat flour)
  • 2 eggs
  • 1/2 cup yogurt (Greek yogurt)
  • 1/2 cup honey
  • 1/2 cup apple sauce
  • 1 apple (medium, peeled, cored and grated)
  • 1 apple (medium, peeled, cored and diced)
  • 5 tablespoons ghee
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • salt (a pinch)

Instructions

1. Preheat oven to 350F (180C).
2. Make oat flour. Add oats to a blender or food processor. Blend until oats have turned into fine flour.

3. In a large bowl, combine oat flour, baking powder, baking soda, cinnamon and salt.
4. In a medium bowl, whisk together eggs, Greek yogurt, honey, apple sauce, vanilla extract and ghee.

5. Add wet ingredients to the dry ingredients, stir well. Add grated apple and diced apple, stir.



6. Divide the batter between muffin cups (I had 15 silicone muffin cups and left some space at the top, to make smaller muffins for kids. If you fill all the way to the top, you’ll get about 12 muffins).

7. Bake in the preheated oven for 20-25 minutes, until a toothpick inserted in the center comes out clean.

A delicious way to use extra apples!

Apple picking season is upon us here in New England, which means I have way too many apples and not enough recipes to make use of them all. Thankfully, these muffins offered something different than the pies and crisps I usually make. They came together quickly and cooked up beautifully. My family gobbled them up! I definitely see myself making more!
