Banana Chia Pudding with Coconut Milk

This banana chia pudding with coconut milk can make a creamy and delicious breakfast or dessert. It’s made with ripe banana, chia seeds, vanilla, cinnamon and coconut milk. The chia seeds absorb the coconut milk and create a thick and pudding-like consistency, while the banana adds natural sweetness and flavor. It's a healthy, Whole30 and paleo-friendly option that can be easily customized with additional toppings like fresh fruit, nuts, or granola.
Banana Chia Pudding with Coconut Milk


  • 1 can coconut milk (mine was almost 14oz)
  • 1 banana (ripe, large)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 5 tablespoons chia seeds
  • banana (chopped, for serving)

1. Add coconut milk, banana, vanilla and cinnamon to a blender cup, blend until smooth.

2. Using a spoon, stir in chia seeds. Pour into small glass jars and cover with a lid or plastic wrap. Let stand in the fridge for a few hours or overnight.

3. Top with chopped banana and serve.
