Chicken and Asparagus Sheet Pan Dinner

Ingredients
- 5 chicken thighs (boneless, skinless)
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt

- 1 pound asparagus (trimmed, I had 35 spears)
- 2 teaspoons avocado oil
- 1/2 teaspoon salt
- 2 teaspoons lemon juice (freshly squeezed)
- ────────
- 10 mushrooms (washed, cut in halves, I had baby bella)
- 2 teaspoons avocado oil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
Yield: 5 servings | Prep time: 6 minutes | Cook time: 24 minutes | Total time: 30 minutes
Instructions
1. Preheat oven to 400F (200C).
2. In a large bowl, combine chicken thighs, Italian seasoning, garlic powder, onion powder, paprika and salt. Mix well.

3. Arrange chicken thighs on one side of a baking sheet. Bake for 12 minutes.

4. Meanwhile, toss asparagus with oil and salt. Toss mushrooms with oil, salt, thyme and garlic powder.
5. Remove the baking sheet with chicken from the oven, add asparagus to the other side of the sheet, arrange mushrooms around chicken.

6. Bake for another 12 minutes, until asparagus is still slightly crispy and internal chicken temperature is at least 165F (74C). Remove from the oven, drizzle asparagus with lemon juice. Enjoy!
