1. Halve sweet potatoes and cut each half into 1/2 inch wedges. Mince garlic.
2. Preheat oven to 425F (220C).
3. Heat olive oil in a large skillet over medium-high heat. Add sweet potato wedges and cook until golden brown, about 3 minutes per side.
4. Transfer sweet potatoes to a foil-lined baking sheet. Add minced garlic, season with salt and pepper, and toss. Roast for 10 minutes, then toss and roast for another 6-8 minutes.
