Healthy Lemon Poppy Seed Donuts
These paleo lemon poppy seed donuts are made using natural and healthy ingredients, a new, healthier way to treat yourself. They are simple to make and come out soft, moist and so flavorful. They can also be used as snacks for kids to take in the car, their belly will always feel happier eating a homemade baked donut rather than some store-bought snack.

Ingredients

  • 2 3/4 cups blanched almond flour
  • 1/3 cup arrowroot starch
  • lemon zest (from 2 medium lemons)
  • 2 tablespoons poppy seeds
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3 eggs
  • 1/4 cup lemon juice (use the zested lemons)
  • 1/3 cup maple syrup
  • 1/3 cup avocado oil

  • 1/4 cup coconut cream (I skimmed from the top of a can of chilled coconut milk)
  • 1 teaspoon maple syrup (or more, until desired consistency is achieved)
  • vanilla extract (few drops)

Notes

I use two 6-cup silicone donut pans for this recipe (for standard-size donuts). If you don’t already have silicone donut pans, this is the brand I recommend.

Instructions

1. Preheat oven to 325F (163C).
2. In a large bowl, combine almond flour, arrowroot starch, lemon zest, poppy seeds, baking powder and salt.

3. In a separate bowl, whisk together eggs, lemon juice, maple syrup and avocado oil. Add wet ingredients to the dry and whisk.

4. Spoon the mixture into donut molds filling to approximately 3/4 way full.

5. Place silicone pans with donuts on a baking sheet, then in the oven. Bake for about 15 minutes, until a toothpick inserted in the middle of a donut comes out clean.
6. Let cool. To remove push up donuts from underneath.

7. Prepare a glaze (optional). Mix together coconut cream with maple syrup and a few drops of vanilla, tasting along the way until it reaches a good balance. Use a spoon to drizzle donuts with the glaze.
