Seared Paleo Chicken with Creamy Garlic Sauce

It’s really great for those days when you don’t have a lot of time to be hanging out in the kitchen. Paleo, gluten-free, dairy-free and Whole30.
Ingredients
- 2 chicken breasts (cut in half, I had one large and one medium, so I cut the large one in 3 pieces)
- 1 tablespoon avocado oil
- Italian seasoning
- salt
- ground black pepper

- 2 tablespoons avocado oil mayonnaise
- 1 tablespoon coconut milk (full fat, from a can, stir before measuring)
- 1 tablespoon Dijon grainy mustard
- 1 tablespoon nutritional yeast
- 1 tablespoon water
- 1 clove garlic (finely grated)
- 1 teaspoon avocado oil
- ground black pepper
Yield: 4 servings | Prep time: 8 minutes | Cook time: 12 minutes | Total time: 20 minutes
Instructions
1. Heat oil in a large skillet over medium-high heat. Sprinkle chicken with Italian seasoning, salt and pepper on both sides. Sear for about 6-8 minutes per side, until golden brown and cooked through.

2. Meanwhile, prepare the sauce. In a bowl, mix together mayo, coconut milk, mustard, nutritional yeast, water, finely grated garlic, avocado oil and pepper.

3. Serve chicken topped with the sauce.
