1. In a large bowl, combine ground pork, Italian seasoning, smoked paprika, fennel seeds, salt and pepper. Mix well.
2. Heat oil in a large pot over medium-high heat. Add pork, onion and garlic, cook stirring constantly and breaking up the meat with a spatula, until it's browned evenly.
3. Stir in chicken broth, water, thyme, undrained tomatoes and potatoes. Cover and simmer for 15-20 minutes.
4. Add kale and cook for another 5-7 minutes.
5. Season with salt and pepper. Serve.
