Chocolate Dates with Almond Butter, Pistachios & Strawberries

Ingredients

  • 10 Medjool dates (pitted, I use large Medjool dates)
  • 2 tablespoons almond butter (creamy, or cashew butter)
  • 2 tablespoons pistachios (chopped)
  • 2 tablespoons freeze dried strawberries (broken into little bits)
  • 1 cup chocolate chips (Belgian dark chocolate works great, or you can use your favorite type of chocolate)
  • 1 tablespoon ghee (or coconut oil)

Instructions

1. Begin by finely chopping the pistachios and breaking the freeze-dried strawberries into little bits.

2. Carefully open the pitted dates and use a small spoon to fill each cavity inside with almond butter.

3. Set up a double boiler by bringing a saucepan with a couple of inches of water to a gentle simmer. Place a heatproof bowl on top, add the chocolate chips, and melt until smooth and creamy. Alternatively, use a microwave-safe bowl and melt the chocolate chips in 30-second intervals. Add ghee or coconut oil, stir well.

4. Using a fork, dip almond butter-stuffed dates into the melted chocolate, ensuring they're completely coated. Allow any excess chocolate to drip off. Place the chocolate-coated dates onto a cutting board (or a baking sheet) lined with parchment paper.

5. Sprinkle the chopped pistachios and broken freeze-dried strawberries over the top of the dates.

6. Transfer the chocolate-covered dates to the fridge and let them chill for about 20 minutes, or until the chocolate has hardened. Enjoy!
