Easy 3-Ingredient Blender Chocolate Cake (Flourless)

  • 8 ounces cream cheese (softened at room temperature)
  • 7 ounces chocolate chips (I use semi-sweet)
  • 4 eggs
  • 1 tablespoon maple syrup (optional, for sweeter taste)

Notes

This rich chocolate cake will last up to one week in the fridge. Store it in an airtight container or covered with plastic wrap to prevent it from drying out.

You can use semi-sweet chocolate or dark chocolate for this recipe. Keep in mind that the sweetness of the cake will depend on the chocolate you choose.

I recommend using an 8-inch or 9-inch springform pan for best results. For easier removal, line the bottom of the springform pan with parchment paper before pouring in the batter.

Instructions

1. Preheat oven to 300°F (150°C).
2. Melt chocolate chips (I use a warm toaster oven), you can also use a double boiler or microwave (30-second intervals, stirring in between, until smooth).
3. In a blender (or food processor), combine eggs, softened cream cheese, melted chocolate, and maple syrup. Blend just until the mixture is smooth and well combined.

4. Line the bottom of a 9-inch springform pan with parchment paper. Pour the blended chocolate mixture into the prepared pan. Bake in the preheated oven for 50 minutes.

5. After 50 minutes, turn off the oven and leave the cake inside for another 10 minutes. Remove the cake from the oven and let it cool completely.

6. Run a butter knife or a rubber spatula around the cake rim to loosen it from the sides of the cake pan. Transfer the cake to a serving plate. Optionally, sprinkle it with powdered sugar and top with fresh fruit, mint or fresh berries. Slice and serve.
