Ground Turkey and Zucchini Fritters (no egg, no flour)
These ground turkey and zucchini patties are juicy and delicious. They are healthier than the average ground turkey patty since they are loaded with zucchini. Dipped in a quick mustard sauce, these fritters are so awesome, they can be served as an appetizer or for lunch with mashed potatoes. They are sure to please.

Ingredients

  • 2 zucchini (medium, shredded)
  • 1 pound ground turkey
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • salt
  • ground black pepper
  • 2 tablespoons avocado oil

  • 1/2 cup avocado oil mayonnaise
  • 1 tablespoon maple syrup (use date paste for Whole30, recipe link in the notes)
  • 1 tablespoon yellow mustard

Notes

My family prefers these turkey zucchini fritters to be small and flat, you can play with the size to find your favorite way to make these.
Use either a store bought or homemade date paste to make the sauce Whole30 compliant, here's a link to my recipe - Whole30 Sugar Substitute {Date Paste}.

Instructions

1. Shred zucchini, sprinkle with salt and let stand for 5 minutes. Use a clean kitchen towel or paper towels to remove excess moisture (the more moisture you remove, the better).

2. In a bowl, combine zucchini, ground turkey, onion powder, garlic powder. Season with salt (a little less than you would usually do, because zucchini have some salt already) and pepper. Mix well.

3. Heat oil in a large skillet over medium-high heat. Place a heaping tablespoon of the mixture into your hand and form a round flat patty. Cook over medium-high heat for 3 minutes, then flip and cook for another 3-4 minutes more, until golden brown and cooked through. Remove from skillet, drain on paper towels. Add more oil as needed for next batches.

4. Prepare the sauce. In a small bowl, combine mayo, maple syrup and mustard. Stir well. Serve fritters with the sauce.
