Easy Shrimp and Veggie Rice Bowl with Spicy Mayo

Perfect for busy weeknights or meal prep, this shrimp bowl recipe is a lifesaver. It's a great recipe that makes for an easy dinner, offering a delicious and satisfying meal.

It features soft fluffy rice as a base, topped with seasoned juicy shrimp and fresh veggies: julienned carrot, cucumber and green onions, alongside soft ripe avocado and spicy mayo sauce.

Best part is that these beautiful bowls take just a little over 30 minutes to prepare, making them a quick and easy meal option that the whole family can enjoy.

Ingredients

  • 1/2 cup rice (rinsed, I use white, use cauliflower rice for Whole30)
  • 3/4 cup water
  • 1 pound shrimp (raw)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • salt
  • ground black pepper
  • 1 tablespoon avocado oil

  • 1 avocado
  • 1 carrot
  • 1 cucumber (I use Persian cucumber)
  • 1 green onion

  • 1/4 cup avocado oil mayonnaise
  • 1 tablespoon sriracha sauce
  • 1/2 teaspoon lime juice
  • toasted sesame oil

Notes

For best results, use high-quality shrimp to enhance the flavor and texture of your shrimp poke bowl. Make things easier for yourself by choosing shrimp from your local grocery store or market that's already prepared: deveined, shelled, and cleaned.

For even more healthy dinner option, you can substitute white rice with brown rice or cauliflower rice (for Whole30). Just remember to adjust the cooking times accordingly based on the type of rice chosen.

You can play with your favorite toppings - use the ones I offered, or get creative with options like fresh pineapple salsa, mango salsa, edamame beans, pickled red onion, red pepper, coleslaw mix, or corn salad. 

Instructions

1. Begin by cooking rice. You can use a rice cooker, if you have one. If cooking on the stove top, place water and rinsed rice in a saucepan over medium-high heat. Once it boils, turn the heat down to low and cover with a lid. Cook for 13 minutes without stirring or removing the lid. After 13 minutes, turn off the heat and let it sit covered for an additional 10 minutes. Season with salt, then fluff with a fork.

2. While the rice is cooking, rinse raw shrimp with cold water and pat dry with paper towels. Season with paprika, garlic powder, salt, and pepper.

3. Julienne carrot and cucumber. Chop avocado and green onion.

4. Prepare the spicy mayo by combining mayonnaise and sriracha sauce. Add fresh lime juice and a few drops of sesame oil to taste.

5. Heat avocado oil in a large skillet over medium heat. Cook the seasoned shrimp in a single layer for about 2-3 minutes per side or until they turn pink and opaque.

6. Arrange shrimp bowls. Place cooked rice in the middle and arrange carrots, cucumbers, green onions, and avocado around the sides. Top the rice with the cooked shrimp and drizzle with the spicy mayo (for easy drizzling, you can transfer the spicy mayo to a ziplock bag, cut a corner, and squeeze it over the bowls).
